There are literally thousands of different crock pot recipes available now days. Everything from the basic beef stew to chicken soup to the more daring pulled pork and jambalaya recipes. You can cook just about anything in a slow cooker, but how about the common potato? Most folks will not even think about cooking a side dish in a crockpot; this appliance is usually thought of for one pot or substantial meat dishes. A great way to introduce a new side dish recipe to the family or to take something interesting to a pot luck is by making a great crock pot potato recipe.

A Bit About the Potato Itself

Most likely, you've never given the potato much thought other than whether or not to use one or two 'dolups of Daisy' on your baked potato. Potatoes are so common place we tend to stick with what we've grown up with or know best, basic mashed or french fried. The potato does, however, have a rich and interesting history, and can be researched as far back in history as four thousand years ago to Peru. However, when it was first brought to the European continent it was not exactly a big hit because the people at the time believed potatoes to be harbingers of disease. Wow, humans have certainly come a long way.

Tips for Storing Potatoes Properly

Now that we are no longer afraid of potatoes (although I am a bit frightened of the carbs at times,) they have a standard place on most family dinner tables. In fact, the average American person will consume over one hundred pounds of potatoes annually. That's about one potato each and every day. So, with all of these potatoes being purchased and consumed, it's probably a good idea to know how to store them properly. Cooking hard or soggy potatoes in a crock pot recipe will not work, so you will need a container to keep them in. Many folks opt for an everyday brown paper sack from the grocery store. Potatoes should be kept in a cool, dry location, preferably off of the floor.

Cheesy Scalloped Crock Pot Potatoes

10 large potatoes, thinly sliced

2 large onions, chopped

2 cans cheddar cheese soup, condensed

1 cup milk

In a small bowl, mix soup with milk. In crock pot, layer one half the potatoes and one half the chopped onions; spread one half the soup-milk mixture. Repeat layering using rest of ingredients. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Do not let your crock pot be used solely for stews and soups. Get that nifty little appliance out and cook all kinds of wonderful new dishes, preferably a nice side dish like our Cheesy Scalloped Potato recipe above. This recipe is great for large groups and will travel well in today's convenient slow cookers. Look for more great side dish recipes online at the numerous recipe and cooking websites available.
